Chickpea and Chicken Melt

Preparation Steps

  1. Turn broiler on oven to high.
  2. Put the chickpeas in a bowl and mash with potato masher to flake.
  3. Add drained chicken and shred up with fork.
  4. Add mayo to desired moistness, about 1/3 cup.
  5. Add seasonings.
  6. Toast whole grain bread slices.
  7. You can usually fill about 8-10 pieces of bread with this mixture.
  8. Top with sliced pickles and sliced tomatoes.
  9. Sprinkle with s&p and top with shredded cheese.
  10. Then put under broiler until cheese is melted.
